Similarly, I'm sure humans are going to try to weasel that money out of her.

I do wonder... if you've got a large estate and an especially greedy or combative family, maybe pulling something like this as a way to say "no, none of you will get it" is the best thing you could do.
Even if it probably won't cause them to re-evaluate their relationships to each other, at least it might stop the whole situation from turning into an Agatha Christie novel.

I remember reading about a man leaving his estate to his pet cat, only for one of his cousins to kill the cat to try and take the money. The money ending up going to charity and the cousin killed himself out of spite.
Sarah was afraid, so she lied and said, “I did not laugh.” But [The LORD] said, “Yes, you did laugh.” - Genesis 18:15 (NIV).

Do those wills hold up in court?

I imagine you'd want a lawyer to go over them very carefully and look for any reason they might not, or any loopholes greedy relatives could exploit.
But I remember hearing somewhere that they generally do stand.

Not sure what a dog is going to do with the money or if the money is used towards keeping it alive and general veterinarian bills and other supplies but it is nice that he loved his dog so much to do this.
