Speaking of which, I haven't checked too much into the games, and Knights of the Old Republic seemed to have the same level of technology as the movies. Did their tech not improve in the thousands of years of history? Would it improve if it were in "todays" time?

Prior to Disney declaring the expanded universe non-canon, it was implied that most of the new tech from that time gap is 'under the hood' improvements. Fixed that. Yep, not long after Star Wars release, Lucas was already saying he had nine movies all planned out.
