Lots, but, "Startide Rising" by David Brin, probably beats out all the others. I love how in-depth it gets about the dolphin characters' culture and thinking, without ever seeming to slow the plot down.

I've been playing Biomutant for that sorta open-ended RPG itch and honestly I think I like it more than any other I've played.
